Beat egg whites in a bowl with electric mixture until soft peaks form.
Add yolks, 1 at a time to beat.
Gradually beat in sugar until sugar dissolved.
Add vanilla essence and coconut and use a large metal spoon to fold in until just combined.
Line up baking sheet with butter paper or brown paper and grease it.
Place a level tablespoon of mixture on oven tray.
Spoon level tablespoons of mixture about 3cm apart on oven try; shape into rounds on tray.
Bake in oven at 170 degree C about 20 minutes or until lightly browned.
