Ingredients

  • Eggs 2 (separated)
  • Caster sugar ¾ cup
  • Coconut 3 cups
  • Vanilla essence 1 tsp

Cooking Directions

  1. Beat egg whites in a bowl with electric mixture until soft peaks form.

  2. Add yolks, 1 at a time to beat.

  3. Gradually beat in sugar until sugar dissolved.

  4. Add vanilla essence and coconut and use a large metal spoon to fold in until just combined.

  5. Line up baking sheet with butter paper or brown paper and grease it.

  6. Place a level tablespoon of mixture on oven tray.

  7. Spoon level tablespoons of mixture about 3cm apart on oven try; shape into rounds on tray.

  8. Bake in oven at 170 degree C about 20 minutes or until lightly browned.
