Danish pastry or Danish bun is a specialty of Denmark. It is very similar to croissant, but it is usually prepared with a sweet filling. Some historians thinks that Danish pastry may have b6een inspired from Turkish "Baklava".

Ingredients

  • Active dry yeast 1 tbsp
  • Warm milk (110-115 degrees) 1, 1/2 cups
  • All-purpose flour 4 cups
  • Sugar 1/2 cup
  • Salt 1, ½ tsp
  • Melted cooled butter 1 cup
  • Egg yolks (lightly mixed) 4
  • Egg whites (optional) 2
  • Jam of your choice or cream cheese filling
  • For Glaze:
  • Powdered sugar 1, 1/2 cups
  • Vanilla extracts 1 tsp
  • Milk 2 to 3 tbsp

Cooking Directions

  1. In a bowl, combine warm milk, sugar and yeast.

  2. Let the mixture sit until the surface becomes foamy (approximately 5 minutes).

  3. Add flour, salt, melted butter and the egg yolks. (Cool the butter before using it, hot butter will kill the yeast)

  4. Mix well until your dough is elastic.

  5. Now put a plastic film over the top of the bowl and place the dough overnight in the fridge.

  6. You can also cover the bowl with plastic wrap and let the dough stand at room temperature for about one hour and a half. Then place the whole bowl in the fridge for an additional hour.

  7. Remove the dough from the fridge and roll out on a floured surface to about 1/4 inch thick.

  8. With a cutter of about 3 inches in diameter, cut some circles of the dough and place them on a greased sheet/tray.

  9. Let the Danishes rise for 30 minutes to one hour.

  10. Then with your fingers, make some wells in the middle of the pastries and fill them with either jam or the cream cheese filling.

  11. Wait about 10 minutes and place the Danishes in an oven heated to 350 degree for 14 to 16 minutes.

  12. Before placing in the oven, you can brush the Danishes with the egg white for a golden shiny surface.

  13. For Glaze: Blend all the glaze ingredients together and pour over the hot Danishes.

  14. Serve with tea or coffee and enjoy.

  2. if you want a real dansker dish try æbleskiver (you need a particular batter and pan to cook in but try it it is a once a year breakfast)
