Its a non hot rice dish, extremely delicious and genuine recipe from Afghan cuisine, very simple to make with mutton and rice. The green paste which is made with spinach, dill and chillies gives pulao very nice taste and texture.

  • Mutton boiled ½ kg
  • Rice ½ kg (soak for half an hour)
  • Spinach ½ kg (very finely chopped)
  • Onion chopped 1
  • Green chillies 6
  • Dill/Soya 1 bunch
  • Fenugreek 4 (small bunches)
  • Oil ½ cup
  • Whole spices 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Salt 1 tsp + 1 tsp

Cooking Directions

  1. Boil mutton with whole spices, onion, ginger garlic paste, and salt.

  2. Boil soaked rice with salt till half done, keep aside.

  3. Chopped spinach, dill, fenugreek and chillies in chopper.

  4. Heat up oil, add spinach mixture and fry it for 5 minutes.

  5. Add ½ cup water with boiled rice and boiled mutton, mix well.

  6. Simmer for 15 minutes.

  7. Afghani yakhni pulao is ready, serve with raita.
