Ingredients

  • Butter 15 g
  • Onion 1 (chopped)
  • Mustard powder ¼ tsp
  • Cauliflower 1 (small pieces)
  • Milk 600 ml
  • Vegetable stock 150 ml
  • Bay leaf 1
  • Oil 2 tsp
  • Salt and black pepper to taste
  • Cheddar cheese 100 g (grated)

Cooking Directions

  1. Melt the butter in a pan, sauté onion until soft then stir in mustard powder.

  2. Add in cauliflower (reserve a few), milk, vegetable stock and bay leaf.

  3. Bring to the boil then reduce heat and simmer for 10 minutes or until cauliflower is tender.

  4. At same time, heat the oil in other pan and stir fry reserved cauliflower until lightly browned.

  5. Remove bay leaf from soup and blend soup into a puree.

  6. Transfer in pan again, add salt and black pepper and cook until bubble.

  7. Remove from flame. Add cheese and stir to mix nicely.

  8. Pour into large bowl and set browned cauliflower on top. Serve immediately.
