Ingredients

  • Onions(chopped) 2 medium
  • Garlic Paste 1 tsp
  • Olive Oil 2 tbsp
  • Uncooked long grain rice3/4 cup
  • Tomatoes 3/4 cup
  • Capsicum(finely chopped)1
  • Tomato Juice 1/2 cup
  • Oregano 1 tsp
  • Salt & pepper To Taste
  • Garnish:
  • Parsley(chopped)

Cooking Directions

  1. In a large pan, add olive oil, cook the onions, oregano, garlic, and salt and pepper until onion is tender.

  2. Add the rice and stir frequently.

  3. Then add in the tomato juice and 1 cup water in the rice and bring to the boil.

  4. Reduce the heat,cover and simmer for 15 minutes over medium heat until rice is tender.

  5. Stir in the tomatoes and capsicum,cook for another 7-8 minutes.

  6. Take off the fire.

  7. Cool it to room temprature.

  8. Then put in serving bowl and refrigerate till chilled throughly.

  9. Garnish with the chopped parsley and serve chilled.
