Slow Oven or Dum Pukht is one of the most refined forms of cooking in India and Pakistan. The traditional technique of cooking with fresh herbs and spices on a low flame with lid sealed with moist dough is more than 200 years old. Farah J Khan uses a more modern and simple approach in cooking this wonderful aromatic dish and still achieves a delicious recipe.

  • For Marination:
  • Fish 1 kg
  • Onion chopped 1
  • Red chilli 2 tsp
  • All spices powder 1 tsp
  • Ginger garlic paste 1tsp
  • Cummin seed roasted and ground
  • Salt to taste
  • For Masala:
  • Onion sliced 1
  • Ginger garlic paste 2 tsp
  • Fenugreeks eed soaked in oil 1 tbsp
  • Turmeric 1/2 tsp
  • Cummin seed 1 tsp
  • All spices powder 1 tsp
  • Red chilli 1 tsp
  • Salt to taste
  • Oil 3 large spoon

Cooking Directions

  1. Marination: Wash fish put in a bowl add onion, red chilli, all spices powder, ginger garlic paste, cummin seed and salt.

  2. Mix well and marinate.

  3. For Masala: Heat oil in a pan fry sliced onion till golden brown.

  4. Take out onion and grind.

  5. Now in pan put ginger garlic paste, fenugreek seed, turmeric, cummin seed, all spices powder, red chilli and fried onion fry it well.

  6. Add marinated fish with rest of marinated ingredients.

  7. Put half cup of water and cover with lid let it cook.

  8. Add green chillies and coriander leaves cover and cook more for a minute.

  9. Do not stir spoon.

  10. Hold the pan  from potholder and gentely tilt from side to side to prevent fron sticking or break fish pieces.

  11. Serve hot with chapaties or rice.
