Chapati or Chapatti is a South Asian flatbread. Chapati is also called "Roti" in South Asia. Chapati accompanies most South Asian meat, vegetable and lentil curries.   • Whole wheat flour 1 cup
  • Salt a pinch
  • Tap water as required
  • Whole wheat flour for dusting as required

Cooking Directions

  1. Sift 1 cup flour with salt in a large bowl.

  2. Add enough water to the flour to make soft dough.

  3. Mix, cover and leave it for 15 minutes

  4. Knead the dough for about 10 minutes.

  5. Put in an air tight container and smooth the surface with slightly wet hands.

  6. Refrigerate for an hour.

  7. Take out, divide dough into 4 portions and make balls.

  8. With the hands, stretch the dough out, fold in half, and repeat this 4 or 5 times.

  9. Now lightly flour the work surface and keep some flour on your side in a large plate.

  10. Dap the dough ball in flour.

  11. Roll out the dough ball with a rolling pin to approx 2mm thick while dusting with flour to prevent it from sticking, shake off excess flour.

  12. Preheat hot plate or griddle (preferably non stick so you wont require oil).

  13. Place chapati onto hot griddle one at a time, and cook for a minute or so, until it turns slightly darker.

  14. Turn, cook another minute, then turn again.

  15. Gently press the edges of the chapati with a bread napkin all around.

  16. Wrap it in a bread napkin and keep warm in a hotpot.

  17. (You can grease the chapatis with butter or clarified butter)

  18. Cover and microwave for a few seconds and they will go soft again.
