Ingredients

  • White flour 1 1/2 cup
  • Castor sugar 3/4 cup
  • Brown sugar 1/4 cup
  • Eggs 2
  • Butter 1/2 cup (4 tbsp)
  • Coffee 1 tbsp
  • Cocoa powder 2 tbsp (use good quality)
  • Vanilla essence 1 tsp (full)
  • Baking powder 1/2 tsp
  • Baking soda 1/2 teaspoon
  • Milk 1/2 cup
  • For Frosting:
  • Semisweet cooking chocolate 3 tbsp
  • Coffee 1 tsp
  • Butter 1/2 cup
  • Icing sugar 2 cups
  • Vanilla essence 1 tsp

Cooking Directions

  1. Preheat oven at 180 degree C or 350 degree F.

  2. Boil milk and add coffee in it. Let it cool.

  3. Combine flour, cocoa powder, baking powder and baking soda together in a bowl.

  4. Beat room temperature butter with castor sugar until fluffy, add eggs one by one and beat.

  5. Add vanilla essence.

  6. Add milk mixed coffee and whisk for 1 minute.

  7. Now fold flour, cocoa, baking powder and baking soda with spatula.

  8. Grease cupcake tray with butter, or line cupcake cases.

  9. Fill each cupcake case 3/4 and bake for 15-20 minutes at 350 degree F until toothpick comes out clean.

  10. For Frosting: In a microwave, melt chocolate and butter for 30 seconds and mix, put in micro for 10 seconds more until smooth.

  11. Transfer to a large bowl. Gradually beat in Icing sugar and enough coffee to achieve desired consistency.

  12. Pipe frosting onto cupcakes. Sprinkles chocolate chips.
