  • Whey ½ litre
  • Small papadam 100 g
  • Salt to taste
  • Curry leaves 8-10
  • Asafetida a pinch
  • Gram flour ½ cup
  • Oil for frying
  • Black pepper to taste
  • Ginger paste ½ tsp
  • Button red chili 3-4
  • Cumin seed ½ tsp
  • Fenugreek seed ¼ tsp
  • Mustard seed ¼ tsp
  • For Baghar:
  • Pure clarified butter 1 tbsp
  • Red chili powder ½ tsp
  • For garnish:
  • Green coriander leaves 1 tbsp (chopped)
  • Green chili 1-2

Cooking Directions

  1. Deep fry all papadom and keep a side.

  2. Take whey in a large cooking pot and add gram flour, salt, black pepper and turmeric, whisk well.

  3. Heat 2 tbsp oil in a frying pan add asafetida, cumin, mustard seed, fenugreek seed, button red chili and curry leaves.

  4. Pour this baghar on whey mixture and bring to boil keep stirring spoon continuously.

  5. Now add fried papadam in curry and cook on slow flame for 10-15 minutes until curry gets thicken consistency then remove.

  6. Now heat pure clarified butter and add ½ tsp of red chili powder dish out curry and pour this baghar on curry.

  7. Garnish with green coriander leaves and green chilies, Serve with fresh salad and parathas.
