Preheat the broiler.
Combine tuna, onion, mayonnaise, lemon juice, parsley, salt, hot sauce and pepper in a medium size bowl.
Spread 2 tbsp of tuna mixture on each slice of toast. Then top the toast with tomato slices and sprinkle cheese.
Place sandwiches on a baking sheet and broil for 3 – 5 minutes, until the cheese starts bubbling and turns golden brown.
Tips & Notes:Tuna light chnks has less mercury than canned white albacore tuna.
The FDA/EPA advises that women who are pregnant, nursing mothers and young children consume no more than 6 ounces of albacore tuna a week. Upto 12 ounces of canned light tuna is considered safe.
