Tempting cheesy tuna toast preferably for hi-teas and even kid's lunch boxes. Its ready within minutes, can be served easily at guests arrival also.

Ingredients

  • Tuna light chunks (1 1/2 cup or 12 ounces canned, drained (see note))
  • Onion 2 tbsp (minced)
  • Low fat mayonnaise 2 tbsp
  • Lemon juice 1 tbsp
  • Flat leaf parsley 1 tbsp (chopped)
  • Salt 1/4 tsp
  • Dash of hot sauce
  • Freshly ground pepper to taste
  • Whole wheat bread toasted 4 (slices)
  • Tomatoes 2 (sliced)
  • Cheddar cheese ½ cup (shredded)

Cooking Directions

  1. Preheat the broiler.

  2. Combine tuna, onion, mayonnaise, lemon juice, parsley, salt, hot sauce and pepper in a medium size bowl.

  3. Spread 2 tbsp of tuna mixture on each slice of toast. Then top the toast with tomato slices and sprinkle cheese.

  4. Place sandwiches on a baking sheet and broil for 3 – 5 minutes, until the cheese starts bubbling and turns golden brown.

  5. Tips & Notes:Tuna light chnks has less mercury than canned white albacore tuna.

  6. The FDA/EPA advises that women who are pregnant, nursing mothers and young children consume no more than 6 ounces of albacore tuna a week. Upto 12 ounces of canned light tuna is considered safe.
