  • Sugar 2 cup
  • White vinegar 1 cup
  • Mangoes peeled and cut in 3/4 of an inch pieces 6 cup
  • Onion, chopped 1 medium
  • Golden raisins 1/2 cup
  • Crystallized ginger, chopped quarter cup
  • Garlic clove, minced 1
  • Mustard seeds, whole 1 tsp
  • Chilli pepper flakes (hot) quarter tsp

Cooking Directions

  1. Combine sugar and vinegar in a six quart pot, bring to boil, strring until sugar dissolves.

  2. Add remaining ingredients and simmer, uncovered, until syrupy and slightly thickened, approximately 45 minutes to 1 hour.

  3. Stir occasionally during cooking.

  4. Pour into clean, hot jars leaving half inch heads pace, close jars.

  5. Process in a water bath for 15 minutes.
