Ingredients

  • Egg yolk 1
  • Cherries 1 cup
  • Sugar 50 gm
  • Coconut 100 gm (desiccated)
  • Butter 125 gm
  • Plain flour 125 gm
  • Lemon rind 1 tsp
  • Vanilla essence ½ tsp
  • Lemon essence ¼ tsp

Cooking Directions

  1. Beat together butter and sugar.

  2. Add coconut, plain flour, egg yolk, vanilla essence, lemon essence and lemon rind.

  3. Mix well. Fold in flour and knead to dough.

  4. Make small balls and press with thumb from centre.

  5. Dip balls in beaten egg white, top with cherry, put in an oven proof tray and bake in pre heated oven for 150 degrees for 35 minutes.
