Ingredients

  • Minced beef ½ kg
  • Breadcrumbs 2 tbsp
  • Green chillies 15
  • Garlic paste 1 tsp
  • Red chilli powder 1/2 tbsp
  • Turmeric powder 1/2 tbsp
  • Hot spices powder 1 1/2 tsp
  • Salt to taste
  • Rice 1/2 kg
  • Tomatoes 3
  • Onions 3 (finely sliced)
  • Coriander leaves 1/2 bunch (chopped)
  • Mint leaves 1/2 bunch (chopped)
  • Dried plums 1/2 cup
  • Caraway seeds 1/2 tsp
  • Cinnamon 3 sticks
  • Black cardamom 3
  • Cloves 4
  • Clarified butter 1/2 cup
  • Oil for frying

Cooking Directions

  1. Soak rice in water for 2 hours, then par-boil it- fry onions red and take them out on paper towels. Put mince, garlic, 5 green chillies, ½ tbsp red chilli powder, turmeric powder, ½ tsp hot spices powder, breadcrumbs and salt in a chopper and grind well.

  2. Make long kebabs from the mince and keep them in a steamer for while before frying in oil.

  3. Heat some clarified butter in a frying pan, add cinnamon, cloves and black cardamoms,fry.

  4. Add tomatoes, dried plums, 1 tsp red chillies, 1 tsp hot spices powder, salt, ½ the fried onions and 5 whole green chillies,fry well.

  5. Divide the prepared ‘qorma’ into 3 portions.

  6. Make a layer in a pot with 1 portion of ‘qorma’ top it with ½ the rice.

  7. Make another layer of ‘qorma’ over rice, add some mint leaves, some friend onions and remaining green chillies, which should be chopped before adding.

  8. Make a layoer of remaining rice on top and place the kebabs over it.

  9. Lastly, make another layer of remaining mint leaves, coriander leaves, fried onions and the third portion of ‘qorma’.

  10. Heat clarified butter, temper with caraway seeds

  11. Pour over rice and keep on dum.

  12. Garnish with green chillies, sliced lemon, lettuce, serve hot.
