Stuffed bagharey tomato is a spicy savory tomato sauce of Hyderabad. This sauce goes great with lentils curry and rice, fried fish or pakoroas or just rice.

  • Tomatoes, sliced 1 kg
  • Nigella seeds, mustard seed, fenugreek seeds, cumin seeds 1 tsp each
  • Garlic cloves, sliced 4
  • Dried red chillies 4
  • Onion, cut thick 1 medium
  • Ginger and garlic paste 1 tsp each
  • Turmeric powder 1/3 tsp
  • Chili powder 1 tsp
  • Curry leaves 2 stalks
  • Green chillies 4-5
  • Handful fresh coriander, chopped
  • Oil 2 tbsp
  • Salt to taste

Cooking Directions

  1. Heat oil, fry cumin seed for a minute then add mustard seeds, nigella and fenugreek seeds.

  2. Continue to fry for another minute or two then add sliced garlic, whole red chillies and onion.

  3. Stir to mix then add ginger and garlic paste, chili powder, salt and turmeric.

  4. After a minute add tomatoes and mix.

  5. Simmer for about 20 minutes.

  6. Before the water evaporates entirely add the curry leaves and green chillies.

  7. Cook till the oil surfaces.

  8. Garnish with fresh coriander before serving.
