Ingredients

  • Unsalted butter 110 gm (cut into small cubes and leave to soften)
  • Caster sugar 150 gm
  • Large eggs 3 (lightly beaten)
  • Ground almonds 90 gm (almond powder)
  • Self-raising flour 40 gm
  • Milk 1 tbsp
  • Pure vanilla extract or almond extract (optional) 1 tsp
  • Flaked almonds for sprinkling 1 tbsp
  • Icing sugar for dusting

Cooking Directions

  1. Pre-heat oven at 180 degree C.

  2. Grease with butter and flour the sides of a 20 cm pan, line the base with parchment paper, set aside.

  3. Place butter, sugar and eggs in a mixing bowl, add almond powder, flour, milk, vanilla extract.

  4. Then beat with an electric mixer or whisk.

  5. Creamed butter and sugar first then add eggs one at a time and beat and then add remaining ingredients and beat until just well combined.

  6. When quite light and fluffy, spoon into the prepared pan and spread the batter evenly.

  7. Sprinkle the flaked almonds over the top.

  8. Bake at 180 degree C for 30-35 minutes or until the sponge just springs back when pressed, or a skewer inserted into the centre comes out clean.

  9. Cover the top with foil about 15-20 mins into baking to prevent the top from over browning.

  10. Run a thin bladed knife around the sides of the pan to loosen the cake.

  11. Then turn out onto a wire rack and let cool.

  12. Dust with icing sugar before serving.
