Ingredients

  • Yogurt 1/2 kg
  • Brinjals (eggplant) 200 gms
  • Salt to taste
  • Red chilies (crushed) 1/4 tsp
  • Cumin seeds 1 tsp
  • Oil 2 tsp
  • Oil for frying

Cooking Directions

  1. Add salt and chilies to yogurt and mix well.

  2. Cut brinjals in round medium sized chips.

  3. Heat oil in a frying pan.

  4. Fry brinjals till golden.

  5. Add these fried brinjals in yogurt.

  6. Heat 2 tbsps of oil in a frying pan.

  7. Add cumin seed to it and fry till it starts to crackle.

  8. Pour it over the brinjal raita.

  9. Garnish with coriander leaves and serve chilled

  10. You can also prepare raita with other vegetables like potatoes, with the same recipe.
