Ingredients

  • Large prawns 3 dozen
  • Vinegar 1 tbsp
  • Coriander cumin powder 1 1/4 tsp
  • Turmeric powder 1 1/2 tsp
  • Salt 1/2 tsp
  • Cold water 1/4 pint
  • Sweet oil (til) 1/4 pint
  • Very large onions 2
  • Green mango, sliced (optional) a small
  • Juice 1 lemon
  • Cumin seeds 1 tsp
  • Jaggery 1/2 tsp
  • Grind to a fine paste:
  • Green chilies 11
  • Dry red chilies 7
  • Cloves garlic 2
  • Salt to taste
  • Coriander leaves half a bunch

Cooking Directions

  1. Clean and wash the prawns.

  2. Boil them in water to which the vinegar, a pinch of coriander cumin powder and salt have been added.

  3. Slice the onion. Heat the oil and brown the onions in it.

  4. Remove the onions and fry the ground spices in the same oil add a tsp of coriander, cumin powder, the turmeric, jaggery, lemon juice and mango.

  5. Stir for about 2 minutes, then add the browned onions and keep stirring.

  6. Add the prawns and fish stock.

  7. Cook, stirring from time to time, till the mixture is quite dry.

  8. Add salt if necessary.
