Schezwan Chicken - Chef Tahira Mateen has shared with us this simple yet delicious recipe of Schezwan Chicken. The soya sauce and ketchup based gravy adds a delicious smooth glaze to well seasoned fried chicken.

Ingredients

  • Chicken boneless 500 gm
  • For Marination:
  • Salt 1/2 tsp
  • White pepper 1/2 tsp
  • Whisked egg 1
  • Corn flour 1 tbsp
  • Oil 1 tbsp
  • For Gravy:
  • Oil 1/4 cup
  • Crushed garlic 1 tbsp
  • Whole red chili 6
  • Carrot finely chopped 1
  • Capsicum finely chopped 1
  • Cabbage finely chopped 1/2 cup
  • Chili sauce 2 tbsp
  • Ketchup 3 tbsp
  • Soya sauce 2 tbsp
  • Salt to taste
  • White pepper 1/2 tsp
  • Sugar 1 tsp
  • Chicken stock 1 cup
  • Corn flour 2 tbsp
  • Water 1/2 cup

Cooking Directions

  1. Mix chicken with all the ingredients of marination.

  2. Leave it to marinate for half and hour.

  3. Noe fry the marinated chicken and leave aside.

  4. In oil saute’ garlic and whole red chili.

  5. Add in carrot, capsicum and cabbage, saute’.

  6. Add chili sauce, ketchup, salt, soya sauce, white pepper, sugar, chicken stock and stir.

  7. When it comes to boil, add fried chicken to it and cook for a while.

  8. Dissolve corn flour in water and add it to gravy while stirring.

  9. Let it simmer gently till gravy thickens.

  10. Serve hot with steamed rice or fried rice.
