Ingredients

  • Bean sprouts 1 cup
  • Chicken breasts 2 (cut in strips)
  • For Marinade:
  • Oyster sauce 1 tbsp
  • Soya sauce 1 tsp
  • Salt and pepper to taste
  • Cornflour 1 tsp
  • For Sauce:
  • Cornflour 1 tbsp
  • Water 4 tbsp
  • Chicken stock ¼ cup
  • Oyster sauce 1 tbsp
  • Soya sauce 1 tbsp
  • Salt and pepper to taste
  • For Other:
  • Oil for frying
  • Noodles 1 packet
  • Onion ½ (chopped)
  • Celery sticks 2 (chopped)
  • Broccoli 1 small floret (cut)
  • Mushrooms ½ cup (sliced)
  • Capsicum 1 (sliced)
  • Spring onion 1 (chopped)
  • Sesame seeds ¼ cup (toasted)

Cooking Directions

  1. Apply marinade ingredients to the chicken then add the cornflour.

  2. Marinate 20 minutes atleast.

  3. For Sauce: Dissolve cornflour with water.

  4. Whisk the water or chicken stock with the oyster sauce, soya sauce, salt, pepper and cornflour and water mixture and set aside.

  5. Soften the noodles by placing them in boiling salted water.

  6. Plunge into cold water to stop the cooking process and drain thoroughly.

  7. Heat 2 tbsp oil.

  8. When the oil is hot, add the noodles.

  9. Fry in batches until golden.

  10. Remove the noodles from the pan.

  11. Heat 2 tbsp oil.

  12. Add the onion and the chicken then add rest of the vegetables separately, except spring onion.

  13. Add the sauce, stirring quickly to thicken.

  14. Add the spring onion.

  15. Pour the cooked vegetable and sauce mixture on top of the noodles.

  16. Garnish the chow mein with the toasted sesame seeds.
