Ingredients

  • Sole Fish Fillets 1 kg
  • Tomato Ketchup 2 tbsp
  • Cheddar Cheese, grated 1 tbsp
  • White Sauce:
  • Green Chutney (grind to a paste)
  • Fresh coriander 1/2 bunch
  • Green chillies 6 long
  • Salt to taste

Cooking Directions

  1. Grease a rectangular baking dish.

  2. Wash and dry fish thoroughly.

  3. Blot out water by wrapping fish in a clean towel.

  4. This is important so that excess water does not accumulate during baking.

  5. Layer the dish as follows: fillets of fish, white sauce, ground green chutney, tomato ketchup, some more white sauce and sprinkle the top with grated cheese.

  6. Bake at gas mark 3/160º C for 10-15 minutes only.

  7. Overbaking will spoil the fish.

  8. Serve with fried grapes or fried raisin.
