Ingredients

  • Dark chocolate 1 3/4 ounces
  • Milk 2/3 cup
  • Egg 1
  • Seedless raspberry preserve 4 tbsp
  • Rum(optional) 2 tbsp
  • White bread 8 thick slices
  • Butter for frying
  • Cinnamon(ground) 1/2 tsp
  • Superfine sugar 3 tbsp
  • A little whipped cream to serve

Cooking Directions

  1. Break the chocolate into small pieces and place in a small pan with the milk.

  2. Heat gently, stirring until the chocolate melts.

  3. Let cool slightly.

  4. Beat the egg in a large mixing bowl and beat in the warm chocolate milk.

  5. Heat the raspberry preserve gently and stir in the rum, if using.

  6. Set aside and keep warm.

  7. Remove the crusts from the bread, cut into traingles, and dip each one into the chocolate mixture.

  8. Heat the butter or oil in a skillet and fry the bread traingles for 2-3 minutes, until just crispy, turning once.

  9. Mix together the cinnamon and superfine sugar and sprinkle it over the toast.

  10. Serve with the hot preserve sauce and a little whipped cream.
