Ingredients

  • Green papaya 100 g (4 oz)
  • Palwals 100 g (4 oz)
  • White-gourd 100 g (4 oz)
  • Aubergine 100 g (4 oz)
  • Pumpkins 175 g (6 oz)
  • Green bananas 2
  • Green Chilies 2 (pared)
  • Sugar 1 tsp
  • Lemon Juice 2 tsp
  • Onion 2 tsp (sliced)
  • Bay leaf 1
  • Panchforan 1 tsp
  • Cooking oil ¼ cup
  • Turmeric ½ tsp (ground)
  • Chili powder ½ tsp
  • Coriander 1/2 tsp (ground)
  • Cumin ½ tsp (ground)
  • Ginger ½ tsp (ground)
  • Garlic ¼ tsp (crushed)
  • Salt to taste

Cooking Directions

  • Peel and cut the vegetables into cubes.
    In a saucepan place the papaya, palwals, bananas, white-gourd, salt and ground spices.
    Add water to cover the vegetables.
    Cook over the moderate heat.
    When vegetables are half-cooked add the aubergine and pumpkin.
    Cook till the vegetables are soft.
    Add sugar and lemon juice.
    In a saucepan heat the oil.
    Put in the panchforan, bay leaf, onion, garlic and green chilies, stir and fry till the onions are brown.
    Add the vegetables simmers for 1 minute.
    Serve hot with boiled rice or chapatti.
