Firstly chop onions,finely lengthwise.
Cut coriander leaves and chop green chillies.
Now, pour ghee/refined oil in a preheated frying pan, then add the chopped onions in the pan n fry on high heat n then add butter immediately (entire quantity) and fry on medium heat.
Now add green chillies and stir until the onions turn light brown.
Add salt to taste.
Stir again (for even distribution of salt).
Finally pour the slightly beaten eggs (add a pinch of salt and beat very lightly) and stir again for about 10 seconds so that the eegs mix well with onions.
Cook on low flame for some time (for onions to cook well) then switch to medium heat until bhujia turns light golden brown.
Finally, garnish with coriander leaves and serve hot with parathas/puri or bread.
