You should use vinegar and lemon juice as a base for the Achar. This recipe is flawed, and will always cause fungus.
Guest, remember that homemade pickle has no chemical preservatives in it. It is a delicate food and should be preserved carefully. Before preserving pickle, make sure the jar is perfectly clean and dry. Sterilizing jars will obviously help. After filling the jar with pickles, tightly close it to keep it well protected from air. Never put dirty or wet spoon in the pickle jar. Never out your fingers in the pickle jar. Refrigerating the homemade pickle jar will also help to keep it save from fungus.
