In the reign of Hindu Raja Chandra Gupt Morya, an expert chef of Taxila cooked Zeera Pulao which was liked by the King very much.

Ingredients

  • Rice 2 cups
  • Onions 2
  • Green chillies 4
  • Tomatoes 2
  • Whole coriander 1 tbsp
  • Aniseed 1 tbsp
  • Cumin seeds 2 tbsp
  • Salt to taste
  • Ghee 1 cup
  • Water a little

Cooking Directions

  1. Fry the onions in hot oil till light golden.

  2. Add cumin seeds, aniseed, whole coriander, green chillies, ginger, tomatoes and water in the same pan.

  3. Cook for 8 to 10 minutes.

  4. Then add soaked rice to it.

  5. Only one and a half glass of water is needed.

  6. When the water dries up, simmer it for 8 to 10 minutes.

  7. Serve it with cucumber, grilled chicken, shami kababs and green raita.

  8. Chef Zakir's Tip: Soak rice in water prior to cooking and then use little water so that the rice could tenderize quickly.
