Cut chicken breast into book form, press well using hammer.
Marinate with salt, black pepper, papaya paste and lemon juice.
Add in spring onion, capsicum, carrot, onion, celery stick, parsley, lemon skin and tomato.
Mix very well.
Cut 1 onion into rings, place onion rings in an oven proof dish.
Top with chicken and vegetable mixture.
Lastly spread grated mozzarella cheese on top and bake in a preheated oven on 200 degrees.
Remove dish after 10 – 12 minutes. Serve hot.
