  • Carrot 1 large (150 gm) chopped
  • Onions 2 medium (300 gm) chopped
  • Celery 6 sticks (chopped)
  • Bay leaves 4
  • Capsicum 1 large (chopped)
  • Black peppercorns 2 tsp
  • Water 3 liters (12 cups)

Cooking Directions

  1. Combine all ingredients in a large pan; cook uncovered for 1-½ hours.

  2. Strain. Makes about 1.25 liters (5 cups).

  3. Stock can be made 4 days ahead.

  4. Storage: covered in refrigerator. Freeze: suitable in small bowls at one time. Microwave: suitable.
