This is very classic recipe, slightly fried okra and potato makes a crispy and amazing taste. Fenugreek leaves gives it delicious aroma.

  • Ladyfinger (okra) 250 gm
  • Potato 2 (cut into fingers)
  • Oil ¼ cup
  • Garlic paste 1 tsp
  • Dry fenugreek leaves 1 tsp
  • Coriander 1 tsp (crushed)
  • All spice ½ tsp
  • Cumin ½ tsp (crushed and roasted)
  • Chili powder ½ tsp
  • Tomato paste 2 tbsp
  • Salt to taste

Cooking Directions

  1. Wash ladyfingers and dry well, cut the top and tail of each ladyfinger and slit from center.

  2. Deep fry on medium flame untill crisp then remove.

  3. Fry potato fingers to a light golden color, remove and keep aside.

  4. Heat 2 tbsp oil in a wok, add garlic paste, fry for a minute.

  5. Add salt, chili powder, crushed coriander, crushed cumin, all spice, dry fenugreek leaves, tomato paste and a dash of water mix well.

  6. Toss in a fried vegetables and leave it on simmer for 5 minutes.

  7. Serve with garnish.
