Ingredients

  • Kairi peeled and finely chopped or grated 1/2 kg
  • Molasses or sugar, finely sliced 1 1/2 tbsp
  • Ginger, finely sliced 1 1/2 tbsp
  • Red chillies, whole 10
  • Kalonji 1 tbsp
  • Raisins soaked in hot water 15
  • White vinegar 1/2 cup
  • Lemons 2
  • Salt to taste

Cooking Directions

  1. Combine all ingredients except lemon in a stainless steel pan.

  2. Cook on low heat, stirring occasionally with a wooden spoon till the liquid thickens.

  3. Remove from heat and cool. When completely cool add the juice of two lemons.

  4. Lemon juice preserves the chutney. Store in glass jars.
