Put rice in a bowl, add spring onions, parsley, mixed herbs, almonds, seasoning & olive oil.
Put the rice mixture in 4 small cups, make an indentation in the centre of each cup.
Then break and slip an egg into each cup and sprinkle the cheese over the eggs.
Bake in preheated oven for about 12-15 minutes, till yolks begin thicken but not harden.
Serve hot in the same cups.
