Raita is a yogurt based sauce usually served with rice and dry curries in South Asia. Vegetable raita is thick and richly flavored with vegetables. Fried curry leaves and cumin seeds adds an exceptional taste to it.

  • Yogurt ½ kg
  • Carrot 1 boiled
  • Potato 1 boiled
  • Beetroot 1 boiled
  • Green chillies 2
  • Curry leaves 6
  • Peas ½ cup boiled
  • Garlic 1 tsp chopped
  • Cumin 1 tsp
  • Black pepper ½ tsp
  • Red chilli powder ½ tsp
  • Salt ½ tsp
  • Fresh coriander 2 tbsp chopped
  • Oil 4 tbsp

Cooking Directions

  1. Beat yogurt in a bowl.

  2. Now add salt, black pepper, chopped garlic, green chilli and chopped coriander.

  3. Now add boiled peas and boiled beetroot, mix.

  4. Heat oil in pan and fry cumin and curry leaves.

  5. Add this tarka on vegetable raita.

  6. Delicious vegetable raita is ready to serve.
