The Baba Ghanouj recipe is one of the great party dip recipes and a classic Mediterranean recipe. Its' spicy eggplant and tahini (sesame seed paste) base is a refreshing change from the ordinary.

Ingredients

  • 1 large Eggplant
  • 1 Lemon
  • 3 Cloves (large) garlic
  • 3 tb (heaping) tahini(sesame seed paste)
  • Salt to taste
  • Paprika
  • 2 tb Olive oil

Cooking Directions

  1. Pierce eggplant with knife in several places, set on a baking sheet, and bake in a 350 degree F. oven for 1 hour or what i do is put egg plant on burner on low flame and after sometime change the place. Let cool.

  2. Strip off and discard peel,either cut eggplant into chunks or Using spoon, scoop out pulp from eggplant into strainer set over bowl to drain excess water,then place in blender.

  3. Add lemon juice, garlic, tahini and salt. Blend until smooth, stopping blender to push down ingredients as needed. Put in a bowl, sprinkle paprika or chopped parsley on top, and drizzle with 2 tbsp olive oil.serve with p ita wedges.

  4. TIP: You can make your own tahini paste in a food processor or blender by grinding toasted sesame seeds. First, toast the sesame seeds over medium-high heat until golden brown, about 3 minutes. A standard 3-ounce package of sesame seeds makes just about 3/4 cup of tahini.
