Ingredients

  • Rice 2 cups
  • Garlic 6 cloves
  • Cucumber 1/2 cup
  • Oil 1/4 cup
  • Salt 1 tsp
  • Roasted Cumin 1 tsp
  • Onion 2
  • Tomatoes 1/2 kg
  • Mushroom Sliced 1 cup
  • Chopped capsicum 1/2 cup
  • Pepper 1/2 tsp
  • Grated cheese 1 cup

Cooking Directions

  1. Boil rice with 1 tsp of salt and drain. (Do not overcook)

  2. Heat oil in a pan and fry mushrooms.

  3. Remove and fry onions till golden.

  4. Add chopped garlic and cucumber and fry for a few minutes.

  5. Add capsicums, tomatoes cut into fours and seasonings.

  6. Add rice and mix well.

  7. Grease a casserole dish.

  8. Make layers of rice with mushrooms and cheese in between the rice.

  9. Sprinkle the top with some cheese.

  10. Bake in hot oven for 30 minutes before serving.
