Dry Potatoes - A delicious baby potato side dish, that has the yummy crunchy flavor of skin. A great companion of roast and barbecue. Baby potatoes are just pricked and cooked with spices. You can slit the potatoes and insert a cube of cheese and serve.

  • Baby potatoes 1/2 kg
  • Cumin seeds 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Coriander & chilli powder 1/2 tsp
  • Salt to taste
  • Ginger (chopped) 1" piece
  • Green chillies (chopped finely) 2
  • Mango powder A little
  • Oil as needed

Cooking Directions

  1. Heat 5 tbsp oil in a pan.

  2. Do not remove the skin of potatoes.

  3. Prick them with a fork.

  4. Add these potatoes to the hot oil and cover.

  5. Cook medium heat stirring occasionally till potatoes are soft and browned.

  6. Then add all the spices and cook for another five minutes.

  7. Serve hot, with roast.
