Ingredients

  • Flour 2 cups
  • Baking powder 2 tsp
  • Salt 2 pinches
  • Eggs 1 1/2
  • Butter 125 g
  • Sugar 1 cup
  • Vanilla 1 tsp
  • Milk 3/4 cup
  • Jam as required

Cooking Directions

  1. Preheat oven to 190 degrees.

  2. Grease or line muffin tins.

  3. Sift together flour, baking powder and salt.

  4. Beat butter for 1 minute until creamy.

  5. Add sugar and beat for 2 minutes until light and fluffy.

  6. Add vanilla and eggs a little at a time and continue mixing for a minute.

  7. Add half the milk, blend and add the dry ingredients all at once.

  8. Pour the rest of the milk and blend well for 1 minute.

  9. Pour a teaspoon each of the batter into the muffin tins.

  10. Add 1/2 teaspoon of jam on each muffin and cover with another teaspoon of remaining batter.

  11. Bake for 8-10 minutes and serve warm..
