Pad Thai is now one of the world's favorite noodle dishes, and luckily it's easy to make at home with these delicious Pad Thai recipes. Choose from chicken pad Thai to shrimp or vegetarian pad Thai. They're all chewy-sticky wonderful. Recipe by Chef Sharmeen.

Ingredients

  • Shrimps 8
  • Tofu (firm) 25 gm
  • Egg 1
  • Oil as required
  • Spring Onions 2
  • Thai Rice Noodles 8 oz
  • Garlic, Minced 4 cloves
  • Fresh Red Chilies 1-2, finely sliced
  • Bean Sprouts 2 cup
  • Ground White Pepper as required
  • Fresh Coriander 1/2 cup
  • Dry Roasted Peanuts 1/4 cup
  • Oil For Stir-Frying 2-3 tbsp
  • Wedges Of Lime for serving
  • Pad Thai Sauce as required

Cooking Directions

  1. Bring a large pot of water to boil, then remove from heat.

  2. Dunk in the rice noodles.

  3. Soak the noodles until soft enough to eat, but still firm and a little "crunchy".

  4. Drain and rinse the noodles thoroughly with cold water. Set aside.

  5. Warm a wok or large frying pan over medium-high heat.

  6. Add Oil and swirl around, then add the shallots, garlic, and chili.

  7. Stir-fry for 1 minute and add the shrimps.

  8. Stir-fry for another 2-3 minutes, or until shrimp are pink and plump.

  9. Push ingredients aside, making room in the center of your wok/pan.

  10. Add oil, then crack in the egg.

  11. Stir-fry to scramble (30 seconds to 1 minute).

  12. Add the drained noodles and drizzle over the pad Thai sauce.

  13. Keep the heat between medium and medium-high - you want your pan hot enough to cook the noodles, but not so hot that the noodles burns.

  14. Stir-fry 4-5 minutes.

  15. Add the bean sprouts and continue stir-frying 1 more minute, or until noodles are chewy-delicious and a little bit sticky.

  16. Remove from heat and taste-test, adding more sauce until desired taste is achieved.

  17. Sprinkle over the white pepper, onion, coriander, and peanuts, and garnish with lime wedges

  18. Toss one more time and serve.

  19. Thai chili sauce can also be served on the side if desired. ENJOY!
