Idli is South Indian savory served as breakfast or snack. It's a white colored rice and split black lentils steamed cakes served with sambhar and chutney.

Ingredients

  • Rice, boiled 2 cup
  • Split black lentils (urad daal) 1 cup
  • Salt to taste
  • Baking soda a pinch
  • Oil for greasing

Cooking Directions

  1. Pick, wash and soak the lentils over night or for 8 hours.

  2. Pick, wash and drain the rice.

  3. Grind it coarsely in a blender.

  4. Grind the lentils into a smooth and frothy paste.

  5. Now mix the ground rice and lentils together into a batter.

  6. Mix salt and baking soda and set aside in warm place for 8-9 hours or overnight for fermenting.

  7. Idlis are ready to be cooked when the batter is well fermented.

  8. Grease the idli holder or pan well and fill each of them with 3/4 of batter.

  9. Steam cook idlis on medium flame for about 10 minutes or until done.

  10. Use a butter knife to remove the idlis.

  11. Serve them with sambhar and chutney.
