Ingredients

  • Round brinjals (aubergines) 1 1/2 lb
  • Mustard seeds 2 tbsp
  • Turmeric powder 1 tsp
  • Salt 2 tbsp or to taste
  • Vinegar 1/4 pint
  • Jaggery 4 oz (crushed and soaked in vinegar)
  • Grind to a Fine Paste with a Sprinkling of Vinegar:
  • Garlic 10 cloves
  • Ginger 2 inch piece
  • Dry red chilies 10 –15
  • Pound Well:
  • Cardamoms 7
  • Cinnamon 1/2 inch piece
  • Cloves 5
  • Pepper corns 8

Cooking Directions

  1. Wash and dry brinjals and cut into rings 1/2 inch thick.

  2. Heat oil and fry ground garlic-ginger-red chilies paste and turmeric powder.

  3. Add brinjal rings and cook till almost done.

  4. Add the jaggery-vinegar solution and finely-ground mustard seeds.

  5. Stir and simmer till this ‘gravy’ thickens.

  6. Sprinkle with pounded spices and set aside till cool.

  7. Store in a jar.
