Ingredients

  • Kidney Beans 1 14 oz can
  • Haricot Beans or cannellini beans 1 14 oz can
  • Sweet Corn 8 oz can
  • Red Bell Pepper 1
  • Fresh Green Chili 1
  • Onion 1
  • Coriander 1 bunch
  • Garlic 1 clove
  • Salt to taste
  • Pepper to taste
  • Tomato deseeded 1
  • For the dressing:
  • Limes 2
  • Salt to taste
  • Pepper to taste
  • Caster sugar 1/4 tsp
  • Oregano 1 tbsp
  • Olive oil 4 tbsp

Cooking Directions

  1. Drain the beans and corn well and set aside in bowl.

  2. Chop the onion, green chili, red pepper and tomato into 1 cm cubes. Mix with the beans.

  3. And season lightly with salt and pepper.

  4. To make the dressing beat the oil, lime juice, zest of 1 lime, oregano and salt and pepper and sugar until well combined.

  5. Pour over salad toss well to combine and allow it to sit for 15 to 20 minutes

  6. Now before serving, garnish with coriander and serve.
