Ingredients

  • Pomfrets or plaice 2 large
  • Prawns 2 dozen
  • Tomato puree 1 dessertspoon
  • Onion 1 large
  • Ghee 1 dessertspoon
  • Green chilies 3
  • Eggs 2 hard boiled
  • Egg 1
  • Garlic a little
  • Salt to taste

Cooking Directions

  1. Clean and wash the pomfrets but keep them whole.

  2. Make slits in the sides for the stuffing and remove the center bone if possible.

  3. Boil the prawns and keep aside ½ cup of the water (if prawns are large, chop them up, if tiny, keep whole).

  4. In a saucepan, heat the ghee and brown the onion.

  5. Add to it chopped chilies, garlic and boiled eggs, the prawns, tomato puree and stock in which the prawns were boiled.

  6. Cook slowly till the mixture turns quite thick.

  7. Remove from the fire and let cool completely.

  8. Now break the egg into it and mix well.

  9. Divide the mixture in half and stuff each pomfret with it.

  10. Rub a little ghee on white butter paper or foil, sprinkle with salt and pepper and wrap round each pomfret.

  11. Bake in a hot oven for 45 minutes.

  12. Garnish with potatoes, fried crisp and brown.
