Ingredients

  • Eggs 4
  • Flour 3 ounces
  • Corn flour 1 ounce
  • Baking powder 1 tsp
  • Caster sugar 4 ounces
  • Vanilla essence 1 tsp
  • Ingredients for icing:
  • Icing sugar 2 ounces
  • Mango juice ½ cup
  • Fresh cream 2 ounces
  • Mangoes 1 cup (chopped)
  • Mango 1 (sliced)
  • Almonds ½ cup (toasted)

Cooking Directions

  1. Pre-heat oven on 180 degree.

  2. For almonds: Boil almonds, peel it then cut in to finely flaked, now bake almonds on 180 degree for 10 minutes

  3. Sieve together flour, corn flour and baking powder.

  4. Beat eggs, stiff gradually adding caster sugar, and beat till fluffy.

  5. Add vanilla essence, beat.

  6. Gently fold in the sieved ingredients.

  7. Pour in a greased two 8 inches round pans and bake in a preheated oven for 25 minute.

  8. Remove and cool the cake.

  9. Method for icing: Beat cream, stiff with icing sugar, spread mango juice on cake.

  10. Apply cake with cream; lavishly sprinkle with toasted almonds and mango pieces.

  11. Cover with second half of cake.

  12. Spread cream on sides and top of cake, decorate the top with sliced mangoes and toasted almonds.
