Phirni - Phirni tastes pretty much like kheer. The difference is of texture and cooking time. Phirni is made of ground rice that's why it cooks quickly and result in a different texture.

  • Rice, Basmati, soaked for 1 hour 3 tbsp
  • Milk, full cream 1 liter
  • Sugar 1,1/3 cup
  • Rose water (gulab jal) 1 tbsp
  • Almonds (badam), blanched, chopped 15
  • Pistachios (pista), finely chopped 10
  • Saffron (kesar), soaked in 1 tbsp water 10 strands
  • Green cardamoms(choti elaichi), crushed 5
  • Silver leaves (varq) 4-5 (optional)

Cooking Directions

  1. Grind the rice with 1/2 cup water. Heat the milk in a pan.

  2. Add the rice paste and keep stirring till it thickens enough to coat the back of a spoon.

  3. Add the sugar and cook till the mixture thickens again to coat the back of the spoon.

  4. Remove from heat, transfer the thickened milk into individual earthen containers or glass bowls.

  5. Sprinkle rose water and half the dry fruits.

  6. Grind the saffron in a mortar and pestle.

  7. Sprinkle this over the dry fruits.

  8. Garnish with the remaining dry fruits, green cardamom powder and silver leaves.

  9. Refrigerate to set. Serve cold.

  3. love this recipe, never thought of grinding or soaking the rice,born in guyana, i'm used to making this dessert by just boiling everything together, always buy this dessert in indian sweet shops in toronto, can't wait to serve it to friends, thanks
