Ingredients

  • Beef 750 gms
  • Onion 5
  • Ginger garlic paste 2 tbsp
  • Salt to taste
  • Turmeric 1 tsp
  • Red chili powder 1 tbsp
  • Kashmiri chili powder ½ tsp
  • Oil 1-1/2 cup
  • Whole wheat flour as required
  • For Nihari Masala:
  • Dried ginger/sonth 3 pieces
  • Muslin cloth as required
  • Aniseed 1-1/2 tbsp
  • Black cumin 2 tbsp
  • Black cardamom 4
  • Green cardamom 4
  • Cloves 10
  • Black pepper ½ tsp
  • For Garnishing:
  • Ginger 1-1/2 inch piece
  • Whole coriander 2 tbsp (coarsely ground0
  • Green chilies 3-4
  • Lemon 2

Cooking Directions

  1. Take a piece of muslin cloth and on the center place aniseed, black cumin, black pepper, green cardamom, black cardamom, dried ginger and cloves tie to make knot now add this pouch in to beef pan.

  2. Boil beef with 1 tbsp ginger garlic paste, turmeric and add pouch; cover to cook till tender and stock prepared.

  3. Now heat oil in a pan and fry onion with adding of ginger garlic paste.

  4. Then add red chili powder, Kashmiri chili powder, salt and beef stock and keep frying.

  5. Now add cooked beef.

  6. Dissolve wheat flour into water in thin consistency and add into nihari whilst stirring spoon.

  7. Now cook nihari on slow heat with covered lid until thick.

  8. Discard whole spices pouch and keep nihari on dam at very slow flame.

  9. Dish out and garnish with green coriander and serve with lemon, ginger julienneand green chilies.

  10. Delhi khas nihari is ready.
