  • Chicken (whole) 1.5 kg
  • Yogurt 1 kg
  • Hara masala paste (Green coriander, Chilies and mint) 3 tbsp
  • Salt to taste
  • Red chili (crushed) 1 tbsp
  • All spice (grounded) 1 tbsp
  • Cumin (grounded) 1/2 tbsp
  • Coriander seeds (grounded) 1/2 tbsp
  • Ginger-garlic paste 1.5 tbsp
  • Vinegar 1/2 cup
  • Oil 1/2 cup

Cooking Directions

  1. Apply ginger-garlic paste and vinegar to chicken, inside and out.

  2. Prick the chicken with a fork and leave for an hour.

  3. Mix rest of the ingredients in yogurt and apply it to chicken as well.

  4. Prick the chicken again with a fork and let it rest for overnight or at least 4 hours.

  5. Heat oil in a big karahi (wok) with a lid.

  6. Fry the chicken in it, lightly form all sides.

  7. Take chicken out after frying.

  8. Now pour all the left over of marinade in the same oil.

  9. Cook until it thickens lightly and forms gravy.

  10. Now return the chicken to karahi (wok).

  11. Cook the chicken and gravy together on low heat, covered.

  12. Keep turning the chicken over.

  13. When the gravy dries up and chicken is tender, turn off the heat.

  14. Stuff the dried residue of gravy in to the chicken.

  15. And return it to the karahi (wok) and cover it with lid to keep the chicken warm.

  16. Ignite a piece of coal.

  17. Place a leaf of onion on the chicken.

  18. Now put the coal on that onion leaf.

  19. Pour a little oil over the coal.

  20. Immediately cover with the lid.

  21. Let it stay covered for 10-15 minutes.

  22. Serve hot with chutni, 'naan' or rice.
