Ingredients

  • Beef - boneless 1 kg
  • Rice 1 kg
  • Red chilli powder 2-1/2 tsp
  • Turmeric 1 tsp
  • Coriander powder 2 tsp
  • Cummin seed 1 tsp
  • Black cummin seed 1 tsp
  • Black pepper (whole) 1 tsp
  • Clove 6
  • Mace and nutmeg powder 1/2 tsp
  • Cassia 2
  • Green cardamom 4
  • Brown cardamom 4
  • All spices powder 1 tsp
  • Salt 1-1/2 tsp
  • Yellow colour 1/2 tsp
  • Oil 1 cup
  • Ginger garlic paste 2 tsp
  • Purnello/Aalobukhara (dried plums) 125 gms
  • Onion (finely chopped) 2
  • Tomatoes 1/2 kg
  • Green chillies 10
  • Green coriander leaves 1/2 bunch
  • Mint leaves 1/2 bunch
  • Kewra /biryani essence 1 tsp/few drops

Cooking Directions

  1. Soak rice for 20 to 30 minutes.

  2. Wash and boil beef put aside.

  3. Heat oil fry onion till golden brown.

  4. Put cassia, all whole spices, ginger garlic paste and fry well. 

  5. Add tomatoes, red chilli powder, all spices powder, turmeric, coriander powder and dried plums, let it cook till tomatoes soften .

  6. Put beef  and let it cook for a while.

  7. Now add 2 green chillies, remove from stove.

  8. For Layering: In a pan heat 2-3 tbsp oil put cummin seed.

  9. Boil rice and strain water.

  10. Now in boiled rice pour prepared gravy, coriander leaves and green chillies

  11. Sprinkle yellow colour and kewra.

  12. Cover lid and steam for 8-10 minutes.

  13. Serce with salad or raita.
