Ingredients

  • Eggs 4
  • Green chilli 1 minced
  • Bread 1-2 slices
  • Onion 1 tsp minced
  • Ghee 1 dessertspoon
  • Salt to taste
  • For the Tomato sauce:
  • Sauté 1 small finely chopped onion in a little batter. Add the following ingredients and simmer till tender:
  • Ripe tomatoes (peeled) 1 lb
  • Garam masala 1/2 tsp
  • Chopped coriander leaves 1 dessertspoon
  • Chilli powder 1 tsp
  • Salt and pepper

Cooking Directions

  1. Hard boil the eggs, shell and keep on one side.

  2. Crumble the bread and soak in cold water.

  3. When soft, drain and squeeze out all liquid and mash well with a fork.

  4. Divide the eggs lengthwise and carefully remove the yolks.

  5. Mash the egg yolks into the bread and add melted ghee.

  6. Stir in the onion, chili and salt and mix well.

  7. Heap the halved egg whites with this mixture.

  8. Place the stuffed eggs carefully in a flat fireproof dish and pour the prepared tomato sauce over them.

  9. Cover the dish and place in a moderate oven.

  10. Cook just long enough for the sauce to simmer.

  11. Remove and serve immediately with hot chappatis.
