This is an excellent, easily prepared Biryani recipe, combining rice and meat with spices. Use homemade spices instead of packet masala to get a great taste and texture of Plain Dehli Biryani.

  • Basmati Rice ½ kg
  • Chicken /mutton/beef ½ kg
  • Milk 1/2 cup (add green cardamom in it)
  • Yogurt 1 cup
  • Onion 2 (sliced & fried)
  • Ginger 1 tbsp (julienne)
  • Tomato 2 (sliced)
  • Red chili powder 1 tsp
  • Turmeric powder 1 tsp
  • Black cumin powder ¼ tsp
  • Garam masala powder 2 tsp
  • Green cardamom powder 1/2 tsp
  • Whole gram masala 1 tbsp
  • cloves 10-12
  • Salt to taste
  • Oil 1 cup

Cooking Directions

  1. Heat up oil; fry chicken then add yogurt and cloves to fry with chicken.

  2. Add tomato, salt, garam masala, black cumin powder, red chili powder, turmeric and ginger, cook it on low flame.

  3. Heat water (2 ½ times more than the rice). As soon as it boils, add the whole gram masala, rice and adjust salt to taste.

  4. Cook the rice till ¾ done and then drain in the colander.

  5. Mix pinch of yellow color in cardamom milk.

  6. Grease a pot and evenly layer the cooked rice and meat (and its gravy) in it to form at least 2 sets of layers (rice-meat-rice-meat-rice). Garnish with fried onion. Cover the dish tightly. Let it simmer for 10 minutes.

  7. Serve hot with raita.
