This creamy basil chickpea spread stands up to and complements the strong flavor of sardines. Even sardine haters might like this sandwich.

  • For Chickpea Spread:
  • Garlic cloves, large, peeled 2
  • Chickpeas (rinsed and drained well) 1 can
  • Extra-virgin olive oil 1.5 tbsp
  • Lemon juice 1.5 tbsp
  • Basil leaves (packed) 1.5 cup
  • Salt to taste
  • For Sandwich:
  • Sardines (packed in water) 2 cans
  • Sesame seed bagels split 4
  • Chickpea spread as required
  • Red onion 4
  • Curly lettuce leaves 4

Cooking Directions

  1. For Chickpea Spread: Drop garlic cloves through feed tube of food processor with blade spinning.

  2. Stop processor and scrape down sides.

  3. Add chickpeas, olive oil and lemon juice and pulse until chickpeas are chopped.

  4. Add basil and process, stopping to push down basil and scrape down sides, until mixture is creamy.

  5. Add salt to taste.

  6. For Sandwich: Drain sardines and wrap in a double layer of paper towels to blot dry.

  7. If Sardines are thick, split lengthwise in half.

  8. Toast bagels and spread the bottom halves with chickpea spread.

  9. Arrange sardines, onion slices and lettuce leaves on top of chickpea spread.

  10. Top with bagel halves.
