Ingredients

  • Cabbage ¼ head (finely chopped)
  • Carrots 2 large (scraped and coarsely grated)
  • Garlic 1 tsp (crushed)
  • Ginger 1 tsp (grated)
  • Cumin seeds 1 tsp (ground)
  • Coriander seeds 1 tsp (ground)
  • Turmeric powder 1 tsp
  • Fresh coriander as required (chopped)
  • Olive oil 15 ml
  • Feta cheese 3 slices (crumbled)
  • Salt to taste
  • Black pepper to taste (freshly ground)
  • Breads (chappatis) 4
  • Coriander sprigs to garnish (extra)

Cooking Directions

  1. Mix cabbage, carrots, garlic, ginger, ground cumin seeds, ground coriander seeds, turmeric powder, and chopped coriander and season with salt and black pepper.

  2. Heat the olive oil in a wok or large frying pan and stir-fry the vegetable mixture over high heat for 4-5 minutes.

  3. Take out and stir in feta cheese and divide the mixture among the 4 bread.

  4. Fold or roll up and garnish with sprigs of fresh coriander.

  5. Serve hot.
