Vegetable Cutlets - These are not simple potato or potato and carrot cutlets. Zubaida Tariq is talking about genuine vegetable cutlets here, that tastes great. These vegetable cutlets are made of potato, carrot, peas and cauliflower. You can also add capsicum in, if you like.

Ingredients

  • Potato (boiled and mashed) 4
  • Carrot chopped 2
  • Salt to taste
  • Mint leaves 1 bunch
  • Rice flour 1/2 cup
  • Black pepper 1 tsp
  • Mustard seeds 1 tbsp
  • Ground cumin 1/2 tbsp
  • Lemon juice 2
  • Green chili 4
  • Peas (boiled and mashed) 1 cup
  • Cauliflower (half boiled) 1 whole
  • Coriander leaves 1 bunch
  • Crushed red chili to taste
  • Oil for frying
  • Egg white 2
  • Bread crumbs as required

Cooking Directions

  1. Combine peas, crushed red chili, cauliflower, potato, green chili, lemon juice, mint, coriander leaves, ground cumin, mustard seed, black pepper, rice flour, carrot, salt and mix well.

  2. Make cutlets of the mixture and use oil for greasing the hands.

  3. Whisk the egg and coat the cutlets in the egg first and then in the bread crumbs, pressing gently.

  4. Fry till golden brown from both sides.

  5. Serve with ketchup.
